We are harvesting the pollen of the male flower of the cattail or typha reed grass The yellow pollen is edible, but so is the top head I’m going to make bread out of this. You can also eat the fluff The entire fluff that comes off. but not the lower ‘sausage’ which is the female part that makes seeds. You can make a tea out of that. The flavour is quite nutty for both the cake (referring to the pollen cake) from the top stem here and the tea made from the lower stem.
