Namaste! Welcome to masala kitchen. Today I am going to make ‘Pumpkin veggie’. I have taken ½ kg pumpkin. I will use mustard oil for cooking it. You can use clarified butter instead of mustard oil. I have taken 2 pinch asafoetida, 2 cayenne and 1 bay leaf. Also I have taken ½ tsp cumin seeds, ½ tsp black mustard seeds, ½ tsp fenugreek, ½ tsp aniseeds and ½ tsp onion seeds. I will also add 1 finely chopped green chilli. In the spices I will take; salt, coriander powder, turmeric powder, garam masala, roasted cumin powder, red chilli powder, 2 tsp dry mango powder and 1 tbsp sugar. At first, chop the pumpkin. Add 2 tbsp mustard oil to the pan. Bay leaf Cayenne Now, add asafoetida and other spices. Turmeric powder Now add chopped pumpkin. Add 2-3 tbsp water to it. Cover it and let it cook for 4-5 minutes. Now add salt to it. Cover it and let it cook for 2-3 minutes. Coriander powder Turmeric powder Kashmiri red chilli powder Garam masala Roasted cumin powder Let it cook for 3-4 minutes. At last, add sugar to it. Dry mango powder Take it out in a bowl. Garnish it with cilantro.
